Koji-kin Producers

There are six major koji-kin or ‘tane-koji’ producers in Japan

1) Hishiroku Moyashi

Location: Kyoto
Specialties: Sake, miso, amazake, shoyu, and shochu.
Link: Hishiroku doesn’t have a website but their tane-koji is sold by Kawashimaya online store.

2) Higuchi Matsunosuke Shōten

Location: Osaka
Specialties: Sake, miso, shoyu, mirin, shochu.

3) Akita Konno Shoten

Location: Akita
Specialties: Sake, shochu, miso, shoyu, and tempeh.

4) Kawauchi Genichiro Shoten

Location: Kagoshima
Specialtie: Shochu and others.

5) Kojiya Sanzaemon & Bio’C

Location: Toyohashi, Aichi
Specialties: Miso, sake, shochu, shoyu….
