There are six major koji-kin or ‘tane-koji’ producers in Japan
1) Hishiroku Moyashi
Location: Kyoto
Specialties: Sake, miso, amazake, shoyu, and shochu.

2) Higuchi Matsunosuke Shōten
Location: Osaka
Specialties: Sake, miso, shoyu, mirin, shochu.
